3 healthy snack trends for life on the go

Most food trends come and go, but these three healthy snacks have been around for a while now. I tried Pinterest’s most popular healthy snack recipes:

1. Salt and Vinegar Kale Chips

Kale chips are the leaders of popular snack trends. There are so many recipes that offer all different kinds of flavours but I went with salt and vinegar, a classic!

I found this great recipe on Gimme Some Oven.

What you need:

  • 1 bunch of your favourite type of kale
  • 1 tablespoon of olive oil
  • 2 tablespoons of apple cider vinegar
  • 1 teaspoon of salt

First, preheat your oven to 350° F. Next, wash your kale and remove the ribs. After that, chop it into chip-sized pieces. Then in a bowl, massage olive oil and vinegar onto the kale. Lay the pieces out on a cookie sheet and sprinkle with salt. Bake for 10 minutes or until crispy. *Make sure you keep an eye on them because they burn fast!

These are great for an easy snack but don’t store very easily. I recommend eating them within the same day of making them or storing them somewhere they won’t retain moisture. I made the mistake of bringing them to work two days later and wound up with wilted kale instead of crispy chips! All-in-all, very delicious and a healthy alternative to regular chips.

2. Garlic Roasted Chickpeas

One thing I don’t like about kale chips is that they don’t leave you feeling very full. Chickpeas are a great source of fiber and protein so they’re a more substantial snack in terms of hunger. There are also various recipes and flavour creations for roasted chickpeas, but I’m a huge garlic fan so my choice was obvious.

This recipe is modified from TGIF.

What you need:

  • 1-2 can(s) of chickpeas (depending on how many you want)
  • 2 tablespoons of olive oil
  • 1 ½ tablespoons of garlic powder
  • 1 teaspoon of onion powder
  • ½ teaspoon of salt

First, wash and strain your chickpeas and remove any loose skins. Preheat your oven to 400° F. Lay the chickpeas out on a towel and let dry for 20-30 minutes. Once mostly dry, place on a cookie sheet and bake for 45-60 minutes, or until crunchy. Next, remove from oven and mix with other ingredients in a bowl.  Transfer them to your storage container and enjoy!

These are definitely my favourite snack trend. They’re tasty and are great to take with you anywhere. You might want to make sure you have some gum on-hand for when you’re done though, very garlicky!

3. Chocolate Chip Peanut Butter Energy Bites

Last but not least, these easy no-bake bites are perfect to tide you over in between meals. They take very little time to make, which I love.

I’ve modified this recipe from Chef Savvy.

What you  need:

  • 1 cup of oats
  • ⅔ cup of peanut butter (crunchy or smooth, both work)
  • ½ cup of milk chocolate chips
  • ½ cup of ground flax seeds
  • 2 tablespoons of honey

Ready for the easiest instructions yet? Combine all ingredients in a bowl and roll into small balls. Refrigerate until ready to eat. Voila!

If you’re rolling the bites with your hands, I recommend putting some kind of cooking oil on your hands first. It can get pretty sticky!

These bites are super convenient and the ease of preparation definitely helps for life on the go.
